Eating healthy doesn’t have to taste yucky! Since I’ve been focused on my eating clean kick, I thought I could share a simple recipe I got to enjoy last week. I thought of what would go well on a Tilapia fillet and ta-da! I wish I had cooked up asparagus (my favorite), but we had some zucchini that needed to be used. Still yummy tho!
- Tilapia Fillet
- Minced Garlic
- Lemon Juice
- Salt & Pepper
- Your choice of vegetables seasoned with garlic salt (saute in pan with olive oil)
- Cover fillet with all ingredients to your liking (garlic, parsley, lemon juice, salt & pepper)
- Use aluminum foil to wrap around the fillet, then set onto an oven sheet
- Bake at 350 degrees for 35 minutes
*Tilapia is also super yummy on tacos! Add the fillet on a whole wheat tortilla with lots of veggies and beans!
