Tasty Tuesday: Pesto Chicken with Spinach, Tomato and Artichoke




Last week I decided to venture into my Pinterest boards and came across this healthy chicken dish. I cooked it up for my parents during our weekly Tasty Tuesday get together and it seemed to be a big hit…even though I ended up overcooking the white rice. It was still delicious nonetheless.

I placed four large chicken breasts within a casserole dish. I ended up having to butterfly the pieces of meat because they were too thick. Butterflying your meat allows for less cooking time and preventing the meat from becoming too dry. When you butterfly a piece of meat, you cut down the middle without going through to the other side. When you’ve done that you fold the meat out so it creates a butterfly shape.

*My Advice: Butterflying the meat helped my cooking time be 30 minutes exact. Everything else I followed step-by-step.

*My Sides: Setting the chicken on top of overcooked rice. Note to self: read the box for rice instructions, ha!
